How do you set up and prepare your section before service begins?
A well-prepared section allows you to move efficiently, reduce mistakes, and provide seamless service throughout your shift.
Steps for Proper Pre-Shift Preparation:
- Check Your Tables
- Ensure tables are clean, properly set, and ready for guests.
- Straighten chairs, polish silverware, and adjust table settings.
- Stock Your Station
- Refill condiments, napkins, and side items (butter, sauces, etc.).
- Make sure water pitchers, glasses, and coffee stations are stocked.
- Test Technology & Equipment
- Verify the POS system is working and that you have an order pad or tablet.
- Check card readers, receipt printers, and any mobile ordering devices.
- Review the Menu & Specials
- Know the day’s specials, promotions, and limited items.
- Be prepared to answer guest questions about ingredients or preparation.
- Communicate with the Kitchen & Bar
- Find out if any menu items are unavailable to avoid disappointing guests.
- Ask the bar if there are featured cocktails or recommended pairings.

Imagine starting your shift without checking your section. Your first table asks for salt and pepper—but you realize your station is out.
